With only minor exceptions I love the entire building process but I would probably have to say that the finish/detailing stage is my favorite.  Followed very closely by designing and framing.  Equipment installation is my least favorite thing, particularly the electronics.  I absolutely love to fly as well but would give up flying long before I would give up building!

Definitely the detailing and finishing for me. Its relaxing doing rivets and screw, but the most rewarding thing for me is making stuff that no one else is crazy enough to attempt. I enjoy complicating a build by making those details that people are either asking Why or How. Lol

painting and details, its the 2nd half where the artmanship over takes the craftmanship

....doing incidence and canopy frames makes me grumpy..as does servo chatter for too long..but!...love the end when you play with all the servos and everything is finally working as it should, and all you need to do is adjust travel and differential...knowing the maiden is near

I like dreaming and researching what finish will be the most rewarding for my taste... and how it will feel with that finish doing both the low high speed pass and slow dirty pass...

I think I've got to say planning.  Or maybe I should say dreaming.  It's great everything can be a idealistic utopia, "Ooh, I could do this!", "And then I could do that!"...

After that I think I like framing best, it's the fastest part where you see the biggest payoff for the effort/time you put in.  Start with some parts and maybe an hour later you've got something recognizable.  Electronics I'm probably neutral on, it's just a step in the process.  And we'll see what I think of finishing when I get to that stage on my A-26, so far I've only finished with iron on covering.  I'm looking forward to trying out fiberglassing and painting (I've painted other stuff, just not any of my planes).
