I was at the QSAA a few years ago and someone walked by and asked: "Why do all these guys have grey hair?"

Good question--Why arn't the young guys building the big stuff?

And are we talking "building" as opposed to "assembling"?

I would say that the biggest reason is interest, or the lack of interest, in aviation.  We older modelers grew up at a time where the events of WWII were experienced by us, or by our parents.  Also, those events touched the lives of a huge proportion of the world population.  This resulted in a large number of people being interested in aviation and scale modeling.  For the youth of today, those events are some foggy subject lightly covered in a high school history class with no significant personal ties.  Even today's military consists of less than .5% of the US population as compared to 12% during WWII.

Also, today's youth have ready access to other forms of entertainment, that there is a general decline in hobbies of all types.  Even if someone today becomes interested in RC, it's less likely that they would get into scale RC, but more likely that they would become interested in 3D, quads and FPV.

I would add that the free time and resources  that parents have to dedicate to such a demanding hobby are limited, as long as the children are in the home or students.
It is only after they leave that we have the resources to invest in the hobby, the free time to kill, and the extra space in the house.
